'Wow' was enough for one happy diner, emerging from a meal at this 'gem of a restaurant' that has been cheering up Surrey's culinary map since late 2012. There's endless praise for the friendly, knowledgeable staff. Chef Fernando's ears must be burning with the amount of glowing chatter about his culinary skills. His menu spices up a true marriage of style and substance with generous slugs of inventiveness. Start with a courgette carpaccio with buffalo burrata, 'light and fresh with a lovely kick in the dressing', and follow with beef Wellington from a grain-fed Cumbrian herd, served with truffle mash 'to die for', brassicas and oxtail jus. A 'sublime' rhubarb fool comes with yoghurt ice-cream and honeycomb, while an exceptional French / English cheeseboard offers six cheeses and six paired garnishes: eat the nugget of nougat with nutty Comte, for example. The wine list matches the calibre of the food with global choices (from £17.50).
